Grilled snails with pepper

Grilled snail with peppers is a popular dish in the Mekong Delta, it is easy to cook but requires a little secret.

Good snails are black, medium size; then they are soaked in rice water to release dirty. After that, cleaned snails are grilled under wooden coal and put mixed liquid of spices like fish sauce, pepper, garlic and sugar into each snail.

Flesh of snails when eating should be crispy, tender, sweet, spicy, and fragrant.

Most restaurants in Can Tho city are serving this dish, in which the most  famous restaurant is Hoa Su restaurant.
