Duck cooked with soya cheese hot pot

With a huge area for rice cultivation, Can Tho and Mekong Delta provinces have favourable condition to raise ducks on the fields, so duck meat has become popular for a long time in the region.

In Can Tho, duck meat are cooked into many dishes such as roast duck, rice soup with duck, duck with bamboo shoots, duck curry, special duck noodle soup, but duck cooked with soya cheese hotpot is one the most special dishes.

Ingredients for this dish includes duck meat, soya cheese, mushroom, coconut juice, taro and some other ingredients. Cleaned duck is cut into pieces; then mixed with soya cheese, ginger, and some spices; then fry minced garlic until fragrant, put marinated meat into pot to fry until condensing; further, put coconut juice, mushroom and taro into it.

It is usually served with noodle, vermicelli, or rice and some kinds of vegetable like water spinach, brassica juncea leaves. This dish becomes more delicious when you enjoy with soya cheese which is added a little of sugar, lemon, and chilli.
